Sweet Wishes is not just a sweet Malagasy wine. It is a concentrated dessert wine with acidity, soft sugars and alcohol that is very subtle, although present.
Vinification
When the Malagouzia grapes approach the right degree of ripeness, the stems are twisted and crushed, while the fruit is left to over-ripen. The overripening process lasts for 20 to 30 days. The grapes are not completely detached from the vines, thus preserving the aromas of the variety. Thanks to slow concentration, complex aromas emerge. The overripe fruit is then vinified with the skins for about a month, following the principles of red vinification. The must continues fermentation in Acacia barrels.
Aromas
The result of this process is a wine with complex, intensely expressive aromas, accompanied by a delicate, distinctive and rare taste. Aromas of apricot, roasted orange and subtle wax, meet the acidity of the wine, the mild - for a dessert wine - fatness, forming a beautiful and balanced tasting experience.
Pairings
Sweet Wishes are ideally combined with challenging flavours such as savoury sweet, spicy or fermented products. The fatty textures of the dishes will match the acidity of the wine. It will soften them and give a sense of vibrancy to the palate. As a dessert wine, it can also stand on its own, as an aperitif, and it pairs perfectly with luxury chocolates and fruit desserts.
